🍄:Kombucha

Wikipedia>Kombucha is a fermented black tea. Some people drink it for the purported health benefits, but I'm rather sceptical of them; I brew and drink it because it's fun, healthier than soda, and tastes much better :D

Terminology

• SCOBY: Symbiotic Culture Of Bacteria and Yeast (Wikipedia>SCOBY)

• Microbial mat (or pellicle): a gelatinous, cellulose-based clump of SCOBY found floating at the liquid-air interface at the top of the brewing container (Wikipedia>Microbial mat)

  • People often refer to the SCOBY pellicle as just “the SCOBY”, but this is misleading; the SCOBY is actually present throughout the liquid. It's just primarily visible in the form of the biofilm/pellicle/microbial mat that grows where the air and liquid kombucha meet.
